This Paleo banana bread recipe serves 12 and is an excellent addition to any Paleo breakfast. To expedite ripening, place your bananas and an apple inside of a brown paper bag; one night will do.

  1. Three whole, fully ripened bananas, mashed (comes to around 1.5 cups).
  2. Three eggs
  3. 1 tbsp vanilla
  4. 1 tbsp honey
  5. 0.25 cup vegan palm oil shortening
  6. 2 cups blanched almond flour
  7. 0.5 tsp sea salt
  8. 1 tsp baking soda
  9. Optional: 1 cup chocolate chips
  10. Preparation: Five minutes
  1. Use a food processor to pulse the bananas, eggs, honey, shortening, and vanilla.
  2. Once the mixture is properly blended, add the baking soda, flour and salt, then pulse the mixture into an even consistency. You can add chocolate chips in at this time if you wish.
  3. Use a spoon or other tool to transfer the batter into a greased 7.5" x 3.5" loaf pan.
  4. Bake the mixture for the indicated time.
  5. Leave the bread to cool before slicing it.
